52 New Recipes in 2010 – 15, Apple and Pear Scones

Okay, I’m over a quarter of the way through this, and it’s only October, and I’m only away for three weeks between now and the end of the year. I’m totally going to get to 52. Totally.

Continuing the elaborate fruit-based pudding theme, I’ve made some apple and pear scones. The recipe is here. I recommend actually using cup measures. Mine appear to have disappeared off the face of the earth, so I was faffing about with maths the whole time, but this doesn’t seem to have messed things up too much. I mean, I have some scones, and they taste pretty good. =)

Also, useful tip – you can make your own buttermilk by adding lemon juice to milk.  I did not realise this before. I now wonder if buttermilk is the key to making scones that rise and are light and fluffy inside – I normally just use milk and they always turn out a bit stodgy. One to remember, I think.

(Incidentally, if you type ‘can you subst-‘ into Google, ‘can you substitute milk for buttermilk?’ is about the third thing that comes up. I find this reassuring. Also, ‘how many grams of apples in a cup?’ turns up useful pages like this one.)

Next up, apple and pear pie and some Indian carrot sweets!
